Ingredients

Seafood, Lasagna, and Cheese

  • ▢12 lasagna noodles
  • ▢1 pound shrimp
  • ▢1 pound crab meat or imitation crab
  • ▢12 ounces quartered scallops
  • ▢2 cups mozzarella cheese
  • ▢2 cups parmesan cheese

Sauce

  • ▢18 ounces canned clam chowder
  • ▢1 cup heavy whipping cream
  • ▢3 tablespoons lemon juice
  • ▢½ cup parmesan cheese
  • ▢1 teaspoon salt
  • ▢½ teaspoon pepper

Cheese Mixture

  • ▢16 ounces ricotta cheese
  • ▢1 egg
  • ▢2 teaspoons minced garlic
  • ▢½ cup fresh chopped parsley
  • ▢½ teaspoon salt

Instructions 

Seafood, Lasagna, and Cheese

  • Cook the 12 lasagna noodles according to the package instructions. Drain and set aside.
  • Preheat the oven to 350 degrees Fahrenheit, and prepare a 9×13-inch baking dish by spraying it with nonstick cooking spray.
  • In a large skillet, cook the 1 pound shrimp and 12 ounces quartered scallops until the shrimp is pink. Mix the 1 pound crab meat in and set aside
  • In another bowl, mix the 2 cups mozzarella cheese and 2 cups parmesan cheese.

Sauce

  • In a separate bowl, combine the 18 ounces canned clam chowder1 cup heavy whipping cream3 tablespoons lemon juice½ cup parmesan cheese1 teaspoon salt, and ½ teaspoon pepper. Whisk together well.

Ricotta Cheese Mixture

  • In a medium bowl, add the 16 ounces ricotta cheese1 egg2 teaspoons minced garlic½ cup fresh chopped parsley, and ½ teaspoon salt. Whisk to combine.

To Assemble

  • To assemble, pour a thin layer of sauce into the bottom of the prepared baking dish. Place a layer of cooked lasagna noodles over the sauce. Next, spread ⅓ of the ricotta mixture, ⅓ of the seafood mixture, then ⅓ of the shredded cheeses.
  • Repeat the process with sauce, noodles, ricotta, seafood, and cheese twice more, finishing with the cheese mixture on top.
  • Cover and bake in the preheated oven for 30 minutes. Uncover the lasagna and bake it for an additional 10 minutes.
  • Remove from oven and allow to cool for about 10 minutes before serving.

Notes

Storage: Wrap and refrigerate lasagna for up to 5 days, or freeze before or after baking for up to 3 months. Reheat from frozen at 375°F for 30–40 minutes or use the microwave for single servings; if baking from frozen, add 20–30 minutes to the bake time.

This dish is a welcome change from boring taco Tuesday. I’ve taken all the flavors of tacos and created an easy pasta dish. Kids love the taste, and I love how quick and easy it is to put together in the electric pressure cooker. To lighten things up, use ground turkey instead of the beef.

Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 envelope taco seasoning
  • 2 cups beef broth
  • 1 can (8 ounces) tomato sauce
  • 8 ounces uncooked medium pasta shells
  • 1-1/2 cups shredded Mexican cheese blend
  • Optional: Sour cream, cilantro, chopped tomatoes and black olives

Directions

  1. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Cook beef until no longer pink, 6-8 minutes, breaking it into crumbles; drain. Add taco seasoning; stir to combine. Add beef broth, tomato sauce and pasta. Press cancel.
  2. Lock lid; close pressure-release valve. Adjust to pressure cook on high for 5 minutes. Quick-release pressure. Stir; top with cheese. Let stand until cheese melts, about 1 minute. If desired, serve with toppings.

Cake

  • 2 large eggs
  • 1/4 cup sour cream
  • 2 tablespoons whole milk
  • 2 teaspoons pure vanilla extract
  • 1/4 cup (25g) walnuts, toasted
  • 1 1/4 cup (179g) all-purpose flour
  • 3/4 cup (149g0 granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 tablespoons 1 stick | (113g) unsalted butter, room temperature

Raspberry Buttercream

  • 1 ounce (30g) freeze dried raspberries
  • 16 tablespoons 2 sticks | (227g) unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • Pinch salt
  • 2 cups (226g) confectioners’ sugar

Candied Walnuts

  • 1 cups (100g) walnuts
  • ¼ cup (50g) granulated sugar
  • Pinch salt

Instructions

For the cake

  • Adjust an oven rack to the middle position, and preheat the oven to 350F. Grease an 8 x 8-inch square baking pan with 2-inch sides, and line the bottom with parchment paper.
  • In a medium bowl or liquid measuring cup, whisk the eggs, sour cream, milk, and vanilla.
  • In the bowl of a food processor, pulse the walnuts until finely ground.
  • In the bowl of a stand mixer fitted with a paddle, mix the flour, ground walnuts, sugar, baking powder, baking soda, and salt on low until combined. With the mixer running on low, add the butter one piece at a time, beating until the mixture resembles coarse sand. With the mixer still running on low, slowly add half the wet ingredients. Increase the speed to medium and beat until incorporated, about 30 seconds. With the mixer running on low, add the rest of the wet ingredients, mixing until just combined. Increase the speed to medium and beat for 20 seconds (the batter may still look a little bumpy). Scrape down the sides and bottom of the bowl, and use a spatula to mix the batter a few more times until completely combined.
  • Pour the batter into the prepared pan and smooth the top. Tap the pan gently on the counter 2 or 3 times to help get rid of any bubbles. Bake 23-28 minutes, rotating the pan halfway through, until the cake is golden brown and pulls slightly away from the sides and a wooden skewer or toothpick inserted in the centers comes out clean.
  • Transfer the cake to a wire rack and let cool for 30 minutes. Turn the cake out onto a half sheet pan lined with parchment paper, remove the parchment paper from the bottom of the cake, and let the cake cool completely upside-down (this will help deflate any doming). Once cool, the cake can be wrapped in plastic and refrigerated overnight or frosted. When ready, frost the cake with the buttercream and sprinkle with candied walnuts.
