Ingredients

  • ▢1 large flour tortilla can use low carb or wholemeal tortilla
  • ▢3 mozzarella string cheese sticks
  • ▢2 tbsp pesto sun dried tomato or basil pesto
  • ▢3 slices pepperoni chorizo or any meat or veggies
  • ▢3 cherry tomatoes halved
  • ▢Oregano dry, pinch
  • ▢1/3 cup shredded light mozzarella can use any type of cheese and topping you want

Optional:

  • ▢egg wash
  • ▢sesame seeds
  • ▢fresh basil

Instructions 

  • Place the tortilla on a plate and arrange 3 string cheese sticks along the edges to form a triangle.
  • Fold the sides of the tortilla over the cheese stick forming the triangle.

Secure the shape with 3 toothpicks

  • Spread pesto in the center.

For spreading, you can use whatever you want, like basic pizza sauce or sour cream, even cottage cheese!

  • Add all your favorite toppings! mozzarella, pepperoni, and tomatoes.

For a TWIST on the classic pizza, you can add an egg right in the middle! No worries, it’s going to cook in the Airfryer

  • Brush the edges with egg wash.
  • Sprinkle oregano and sesame seeds over the crust.
  • Carefully transfer to the air fryer basket and cook at 380°F (190°C)

Cooking time is around 7–10 minutes. After the first 7 minutes, check the pizza crusts! Do not rush this part for a cheesy finish.

  • Remove the toothpicks, finish with fresh basil if using, and serve warm.

Notes

One of the most common mistakes is adding too many toppings. While it’s tempting to load it up, too much moisture can prevent the tortilla from crisping properly. Keep your toppings light so the base holds its shape and cooks evenly.

If your tortilla isn’t crisping enough, it usually comes down to airflow and heat. Make sure it sits flat in the air fryer basket and isn’t overcrowded. Preheating also makes a difference in getting that quick, even cook.

The cheese-stuffed edges need to be sealed well. If they open while cooking, the cheese can melt out too quickly. Rolling the tortilla tightly over the cheese and securing it properly helps maintain the shape.

For best texture:
• Use low moisture mozzarella so it melts without releasing too much liquid
• Slice ingredients like tomatoes thin to avoid excess water
• Don’t skip the egg wash if you want a more structured crust

If you’re using a different cooking method, the same concept applies. In the oven, place it on a preheated tray so the bottom starts crisping immediately. A skillet can also work, but cook on medium heat and cover briefly to melt the cheese without burning the base.

Let it sit for a minute after cooking before removing the toothpicks. This helps the structure set and keeps everything in place when serving.

Ingredients

  • ▢4 cups all-purpose flour
  • ▢1 teaspoon salt
  • ▢1 tablespoon baking powder

  • ▢1¾ cup buttermilk
  • ▢1 egg (beaten for egg wash)

Instructions 

  • Preheat oven to 450°F.
  • In a large bowl add the flour, salt, baking powder and baking soda and mix it all. To it add the cubed or grated butter. Using a pastry cutter or 2 knives, cut in the butter until the mixture resembles coarse meal. If using grated butter, you just have to mix the butter in with the flour.
  • Next, add the buttermilk to the bowl. Stir in the buttermilk until just moist and knead the dough a few times. Turn the dough onto a lightly floured surface and gently bring it together with your hands. Pat the dough into a rectangle, then fold it over onto itself like a letter. Turn the dough, gently flatten it again, and repeat this folding process 2 to 3 times. This is what creates layers and helps the biscuits bake up tall and flaky.
  • Roll out the dough to ½ to ¾ inch thickness, and cut with a 2 inch biscuit cutter. You should get about 12 biscuits.
  • Place the biscuits on an ungreased baking sheet and brush with egg wash. You can also place the biscuits into a buttered skillet.
  • Transfer the baking sheet or skillet to the oven and bake for about 10 to 15 minutes or until nice and golden.

  1. Use cold ingredients: Make sure the butter and buttermilk are very cold. Cold butter is what creates flaky layers in the biscuits.
  2. Do not overwork the dough: Mix the dough just until it comes together and handle it gently. Overworking the dough will make the biscuits tough.
  3. Fold the dough: Folding the dough a few times before cutting the biscuits helps create layers and makes the biscuits rise taller and flakier.
  4. Roll the dough thick: Roll the dough to about ½ to ¾ inch thick. Thicker dough will give you taller biscuits.
  5. Do not twist the cutter: Press the biscuit cutter straight down and lift straight up. Twisting the cutter can seal the edges and prevent the biscuits from rising properly.
  6. Bake biscuits close together: Placing the biscuits close together on the pan helps them rise upward and keeps the sides soft.
  7. Use fresh baking powder and baking soda: Old leavening agents can cause biscuits not to rise properly.
