Creamy garlic butter pasta

Ingredients:

  • 10 oz dry pasta
  • 3 Tbsp butter
  • 4 large garlic cloves, minced
  • 2 Tbsp flour
  • 2/3 cup whole milk
  • salt & pepper

Instructions:

  1. Cook the pasta according to directions.
  2. While the pasta is cooking, make the sauce.
  3. Melt the butter in a saucepan over medium heat. Add the garlic and cook, stirring, for 1-2 minutes. It should be simmering.
  4. After 1-2 minutes, transfer the butter/garlic to a blender, and blend until smooth. Return to the saucepan over medium heat and add the flour.
  5. Whisk constantly, mixing the flour and butter together, for one minute. Slowly, whisking quickly, add the milk. Bring to a simmer and cook (stirring) until thickened.
  6. When the pasta is done, mix in the sauce. Add salt and pepper as needed.

One Pot Creamy Chicken and Mushroom Pasta

Ingredients:

  • 1 tbsp. olive oil
  • 1 lb. boneless skinless chicken breast, sliced
  • 2 tsp. grill seasoning
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 8 oz. cremini mushrooms, sliced
  • 3 1/2 cups fat free chicken broth
  • 8 oz. high fiber pasta (break spaghetti or linguine in half)
  • 1/2 cup Parmesan cheese
  • 1/4 cup half and half
  • Salt and pepper

Instructions :

1-Heat the olive oil over medium high heat. Sprinkle the chicken with grill seasoning. Add to the pan and cook for 5-7 minutes until cooked through and lightly browned. Remove and set aside.

2-Add the onions, garlic, and mushrooms to the pan. Cook for 4-5 minutes until mushrooms are becoming tender. Stir often so the garlic doesn’t burn.

3-Add the chicken broth and bring to a boil. Add the pasta and simmer for 12-15 minutes until pasta is tender and has absorbed most of the liquid. Stir as needed, especially as the liquid is absorbed more. Add extra liquid if needed.

4-Stir in the Parmesan cheese and half and half. Then stir in the chicken. Season with salt and pepper. Let rest for 5 minutes for the sauce to thicken.

Creamy Tomato Spinach Pasta Recipe

Ingredients:

  • 1 pound Short Cut Pasta, like Mini Penne
  • 3 tablespoons Olive Oil
  • 1/2 cup Onion, diced
  • 3 cloves Garlic
  • 2 teaspoons Salt
  • 10 ounces Cherry Tomatoes, halved
  • 4 cups Fresh Spinach
  • 1 cup Milk
  • 1/2 cup Grated Parmesan Cheese

Directions:

  1. Cook mini penne according to the package.
  2. In the meantime, add olive oil, onions, garlic and salt to the pan. Cook on medium heat for 3 minutes.
  3. Add tomatoes. Cook for another 3-5 minutes or until softened.
  4. Add spinach to the pan. Cook on medium heat for 3 minutes or until wilted.
  5. Pour in milk and allow to boil for 2 minutes.
  6. Toss in penne, stir well.
  7. Top with cheese.
  8. Serve warm and enjoy!
