Equipment

Ingredients

  • 1 tbsp coconut oil, melted (14 g) sub other neutral oil or more tahini
  • 2 tbsp tahini, or other nut/seed butter (28 g)
  • 3 tbsp maple syrup (63 g) sub honey or other syrup
  • 1/2 cup all purpose flour (60 g) sub gf all purpose
  • 1/2 tsp baking powder
  • pinch of salt

Instructions

  • Blend coconut oil, tahini, maple syrup.
  • Whisk together flour, baking powder, pinch of salt.
  • Combine the two into a dough, do not overmix. If too dry add a drop of water, if too wet add a pinch of flour. Refrigerate 5-10 min.

Choose your own adventure:

  • If doing spiral cookies, make two of this same dough, one with tahini, another with black sesame paste. Roll out into rectangles on parchment (I used my hands) and refrigerate another 5-10 min. Plop one over the other and roll into a log shape, freeze until solid.
  • If not doing spirals, immediately make a log (parchment helps), freeze until solid.
  • You can get the log out mid freezing and roll a little to make it more even.

Slice and bake:

  • When ready to bake, preheat oven to 325F. Line a cookie sheet with parchment.
  • After thawing for a few minutes, slice your roll into 1/4 inch cookies and place on the parchment.
  • Bake 15+ minutes, depending on how crispy you prefer. Let them cool and enjoy!

Ingredients

  • 1/2 cup [113 g] mashed bananas (about 1 1/2 bananas)
  • 1/3 cup [80 g] heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups [320 g] all-purpose flour, plus more for dusting*
  • 1/3 cup [65 g] granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine salt
  • 12 tablespoons [1 1/2 sticks or 170 g] cold unsalted butter, cut into 1/2 in [12 mm] pieces

Sesame Icing

Instructions

For the scones

  • Line a sheet pan with parchment paper. In a medium bowl or liquid measuring cup, whisk together the mashed bananas, heavy cream, egg, and vanilla. Refrigerate until ready to use.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Add the butter to the dry ingredients, and use a pastry cutter to cut in the butter until the flour-coated pieces are the size of peas. Add the refrigerated wet ingredients and fold with a spatula until just combined.
  • Transfer the dough to a generously floured surface and knead ten to twelve times, until it comes together, adding a little flour as necessary (the dough will be sticky). Pat the dough into a square and roll it into a 12 in [30.5 cm] square, dusting with flour as necessary. Fold the dough into thirds, like a business letter. Fold the dough in thirds again by folding in the short ends, making a square. Transfer it to the prepared sheet pan and put it in the freezer for 10 minutes.
  • Return the dough to the floured surface, shape it into a 12 in [30.5 cm] square, and fold the dough in thirds again. Turn over the dough, so it’s seam-side down, and gently roll out the dough into a 12 by 4 in [30.5 by 10 cm] rectangle.
  • With a sharp knife or bench scraper, cut the dough crosswise in to four equal rectangles, then cut each rectangle diagonally into two triangles, for a total of eight scones. Transfer the triangles to prepared sheet pan. Freeze the scones for 30 minutes, or up to two weeks.
  • When ready to bake, position an oven rack to the middle of the oven and preheat the oven to 375F [190C].
  • Brush the tops of the scones with a little heavy cream, making sure it doesn’t drip down the sides. Place another sheet pan under the scones, so the pans are double-stacked (this helps prevent the bottoms of scones from browning too quickly). Bake the scones, rotating the stacked pans halfway through, until the tops and bottoms are light golden brown, 18 to 25 minutes. Transfer the top sheet pan to a wire rack and let the scones cool slightly.

For the toasted sesame icing

  • While the scones are baking, in a small bowl, whisk together the melted butter, toasted sesame oil, vanilla, and salt. Add the confectioners’ sugar and mix together, then whisk until well combined and smooth. If needed, add water, 1 tablespoon at a time, to reach the desired consistency. Use the back of a spoon to top each scone with the icing, then sprinkle with sesame seeds. The icing sets quick, so sprinkle the seeds right after icing each scone.
  • Scones are best eaten the same day they are made.

Notes

For a stronger sesame flavor, use 2 teaspoons of toasted sesame oil but start with 1/2 teaspoon, taste, and adjust as needed

Different brands of flour have varying levels of protein, ranging from low to high, which can result in very different outcomes when baking. Gold Medal all-purpose unbleached flour to be the best option for many of recipes; you can use it in all the baked goods that don’t use yeast. For yeasted doughs that call for all-purpose flour.

They’re rich and satisfying despite being only a bite or two, and every single morsel is loaded with flavor- first butter and then bourbon, followed by rich chocolate and pecans. These treats are entirely decadent to enjoy, plus just look at them. They’re adorable. Who wouldn’t want to dive into these?

Ingredients

For the madeleines:

  • 7 tablespoons (100 gm) unsalted butter, plus more for buttering the pan
  • 2 large eggs
  • 1/3 cup (70 gm) sugar
  • 1–1/2 tablespoons bourbon
  • ½ teaspoon vanilla extract
  • ½ cup (70 gm) all-purpose flour
  • ¼ teaspoon salt

For the topping:

  • ½ cup (120 gm) heavy whipping cream
  • 4 ounces chopped dark chocolate (I use 60-70% cocoa baking bars)
  • 1 tablespoon bourbon
  • ½ cup (55 gm) finely chopped toasted pecans

Instructions

To make the madeleines:

  1. Place the butter in a small saucepan over medium heat and brown it. Allow the butter to melt completely and the continue cooking, stirring the whole time, until golden flecks appear at the bottom of the pan and the mixture begins to smell warm and nutty. Do not burn the butter. Remove the mixture from heat and pour immediately into a small bowl.
  2. In a large bowl, beat together the eggs and sugar until pale and slightly thickened, about 2-3 minutes. Add the bourbon and vanilla extract and stir to combine. Add the flour and salt and fold to combine. Add the browned butter and fold the mixture just until combined. Cover the bowl and place it in the fridge to chill for 2 hours or overnight.
  3. When ready to make, preheat the oven to 375 degrees and melt 2 tablespoons of butter to liberally grease a madeleine pan. Spoon 1 tablespoons of batter into each madeleine pan and then bake in the preheated oven for about 13 minutes, or until the tops are puffed and the edges and bottom of each madeleine is golden. Remove from the oven and set aside to cool while you make your ganache.

To finish your madeleines:

  1. Warm the heavy whipping cream over the stove or in the microwave just until it’s about to boil. Remove from heat and then pour over the dark chocolate in a medium-sized bowl. Allow it to rest for 3-4 minutes. Whisk the warm cream and chocolate together until smooth. If small chunks of chocolate remain, place back in the microwave for 20 second increments until it is smooth. Stir in the bourbon.
  2. Dip each madeleine in the ganache and then sprinkle with/dip in pecans. Set the madeleines aside on a sheet of parchment or wax paper to set. Madeleines are best eaten the day they are prepared but can be saved overnight if needed.
