Equipment
- 1 9-inch pie dish
- Medium saucepan
- Mixing bowl
- Whisk
- Measuring cups and spoons
Ingredients
- ▢ 1 baked 9-inch pie crust, completely cooled
- ▢ 5 cups fresh strawberries, hulled (about 700 g)
- ▢ ¾ cup granulated sugar
- ▢ 2 tablespoons cornstarch
- ▢ ¾ cup water
- ▢ 1 tablespoon fresh lemon juice
- ▢ 1 teaspoon vanilla extract
- ▢ Whipped cream, for serving (optional)
Instructions
- Bake the pie crust according to the package or recipe instructions. Let it cool completely before filling.
- Wash and hull the strawberries. Set aside about 1 cup of the berries, then arrange the remaining strawberries inside the cooled pie crust.
- Mash the reserved strawberries until mostly smooth.
- In a medium saucepan, whisk together the mashed strawberries, sugar, cornstarch, and water.
- Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy, about 5–7 minutes.
- Remove from the heat and stir in the lemon juice and vanilla extract.
- Allow the glaze to cool for 10–15 minutes, then carefully pour it over the strawberries, making sure the fruit is evenly coated.
- Refrigerate the pie for at least 3 hours, or until fully set.
- Slice and serve chilled with whipped cream if desired.
Notes
This pie is at its best when made with fresh, ripe strawberries during peak season. Chilling the pie completely helps the filling set properly and makes slicing much easier.
Tips
- Use firm, ripe strawberries for the best texture.
- Let the pie crust cool completely before adding the filling.
- Stir the glaze constantly while cooking to prevent lumps.
- Don’t skip the chilling time—it allows the filling to set.
- For cleaner slices, chill the pie overnight.
- Store leftovers covered in the refrigerator for up to 3 days.
- Avoid freezing, as fresh strawberries become watery when thawed.
