Our Favorite Banana Bread

The Epicurious test kitchen baked up the most popular versions of banana bread on our site to discover what we like (or didn’t like) about each one. Then we made our ultimate version: a sweet, nutty, and supremely moist loaf that is everything we could ever want in this classic quick bread.

INGREDIENTS:

  • 1/2 cup (1 stick) unsalted butter, at room temperature, plus more for pan
  • 1 2/3 cups all-purpose flour, plus more for pan
  • 4 medium very ripe bananas (about 13 ounces), peeled and mashed
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup (packed) dark brown sugar
  • 2 large eggs, at room temperature
  • 1/2 cup chopped toasted walnuts

PREPARATION:

  1. Preheat oven to 350°F. Grease a 9×5″ loaf pan with butter and dust with flour, tapping out any excess.
  2. Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
  3. Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
  4. Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60–65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.

Most of the time, we don’t get very excited over pork chops. Often overdone, they come out dry, sad, and flavorless. The air fryer changes all that. These get coated in Parmesan and plenty of spices for the perfect crust, and the quick cooking time in the air fryer ensures they don’t dry out. It’s dinner in an instant.

INGREDIENTS:

4 boneless pork chops
2 tbsp. extra-virgin olive oil
1/2 c. freshly grated Parmesan
1 tsp. kosher salt
1 tsp. paprika
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. freshly ground black pepper

DIRECTIONS:

  1. Pat pork chops dry with paper towels, then coat both sides with oil. In a medium bowl, combine Parmesan and spices. Coat both sides of pork chops with Parmesan mixture. 
  2. Place pork chops in basket of air fryer and cook at 375° for 9 minutes, flipping halfway through.

Roasted Cod, Potatoes, and Chorizo

INGREDIENTS:

2 oz. Spanish chorizo, sliced 1/8-in. thick
1 1/2 lb. small new potatoes (about 20), quartered
8 whole cloves garlic (unpeeled), lightly smashed
1/2 lemon, cut into half-moons, plus wedges for serving
kosher salt
black pepper
1/4 c. fresh flat-leaf parsley leaves
1 1/2 lb. skinless cod (about 1 1/2 in. thick), cut into 4 pieces
2 tsp. olive oil
3/4 tsp. smoked paprika

DIRECTIONS:

  1. Heat oven to 425 degrees F. Cook the chorizo in a large cast-iron skillet over medium-low heat until the oil releases.
  2. Add the potatoes, garlic, lemon and 1⁄4 tsp each salt and pepper to the pan and toss to coat. Transfer to the oven and roast, stirring once after 15 minutes, until the potatoes are golden brown and tender, 20 to 25 minutes. Toss with the parsley.
  3. When the potatoes have 10 minutes left to cook, prepare the fish. Line a large rimmed baking sheet with nonstick foil and place the cod on top. Drizzle the cod with the oil and season with the paprika and 1⁄4 tsp each salt and pepper. Roast on the rack below the potatoes until opaque throughout, 8 to 10 minutes. Serve with the potatoes an
