Spicy Honey-Mustard Sausage Wraps

Ingredients:

  • 1/2of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
  • 1egg
  • 1tablespoon water
  • 2tablespoons all-purpose flour
  • 2tablespoons honey mustard
  • 16ounces turkey or beef kielbasa, cut into 8 pieces

How to Make It:

Step 1

Set the pastry sheet out to thaw.  Heat the oven to 375°F.  Beat the the egg and water in a small bowl with a fork or whisk.

Step 2

Sprinkle the flour on the work surface.  Unfold the pastry sheet on the work surface.  Roll the pastry sheet into a 13 x 9-inch rectangle.  Brush the pastry with the honey mustard.  Cut the pastry into 8 (about 4 1/2 x 3-inch) rectangles.

Step 3

Place 1 piece kielbasa on the long edge of each pastry rectangle. Brush the edges with the egg mixture.  Roll the pastry around the kielbasa and press the seams and pinch the edges to seal.  Place the filled pastries seam-side down onto a baking sheet.  Brush the pastries with the egg mixture.

Step 4

Bake for 25 minutes or until the pastries are golden brown.  Remove the pastries from the baking sheets and let cool on a wire rack for 10 minutes.  Serve whole or cut crosswise into thick slices.  Serve with additional honey mustard for dipping.

Grilled Sweet Potato Salad

Ingredients:

  • 4 sweet potatoes, sliced into 1/4” rounds
  • 2 tablespoons canola oil
  • 5 strips of bacon, cooked and diced
  • 6 green onions
  • 1 garlic clove minced
  • 1 tablespoon whole grain mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • salt & pepper to taste

Instructions:

Preheat grill to medium high heat, about 375-400 degrees F.
To a large bowl add sliced sweet potatoes and drizzle with canola oil. Toss to coat.
Place sweet potato slices directly on the grill and grill each side for 4 minutes.
While the sweet potatoes are cooking, place green onions directly on the grill. Grill each side for 2-3 minutes, until slightly charred. Remove from grill and roughly chop.
Once the sweet potatoes are charred and cooked through, remove those from grill and place in a large bowl.
To that same large bowl add charred green onions and bacon. Set aside.
Right before serving, to a small bowl add minced garlic clove, whole grain mustard, dijon mustard, honey, lemon juice, apple cider vinegar, olive oil, salt and pepper. Whisk to combine everything.
Drizzle the dressing over the sweet potatoes and gently toss to coat all the potatoes. Serve.

Ingredients :

1 kilograms tomato
5 tablespoon virgin olive oil
100 gm chopped onion
salt as required
6 cloves garlic
2 leaves bay leaf
700 ml veg stock
black pepper as required

How to make:

  • Step 1:Place tomatoes and garlic cloves on a roasting tray. Pour some oil over them and rub oil nicely on vegetables with your hand. Ensure they are coated well with oil. Preheat the oven at 180 degree Celsius. Place the roasting tray in oven and roast them for 15 minutes or until they are tender.
  • Step 2:Take a non-stick pan, add remaining olive oil and heat it over medium flame. When oil is hot enough, add bay leaves and cook for a minute. Add chopped onions and saute over medium flame until they turn tender and golden brown in colour.
  • Step 3:Add roasted garlic cloves and potatoes in the pan. Pour veg stock in the pan and reduce the flame. Simmer over low flame for sometime and then remove from flame. Transfer soup to a blender jar and blend to form a smooth puree. Strain this puree through a fine strainer in the pan.
  • Step 4:Reheat the soup for 5 minutes over medium flame, stirring occasionally. Sprinkle salt, black pepper and stir to mix the ingredients well. Transfer to a serving bowl, add croutons and serve it warm.
