Pasta alla Genovese

Ingredients:

PASTA WITH PESTO GENOVESE :

  • 1 garlic clove
  • 1 tbsp of pine nuts
  • 40g of basil
  • salt
  • 1 tbsp of Parmesan, finely grated (plus extra to serve)
  • 3 tbsp of pecorino, finely grated (plus extra to serve)
  • 4 tbsp of extra virgin olive oil
  • 1 large potato
  • 100g of green beans, cut into thirds
  • 400g of linguine, or trenette pasta

Method:

1-Begin by making the pesto. Using either a pestle and mortar or blender, grind the garlic, pine nuts and salt to a fine paste. Add the basil and oil then transfer to a bowl and stir in the grated Parmesan and Pecorino. If not using immediately, cover the pesto with extra oil to prevent it discolouring (due to oxidation)

2-Cook the pasta al dente, following the instructions on the pack

3-Peel and cut the potato into 2cm cubes. Cook until tender in salted boiling water

4-4 minutes before the pasta is ready, add the green beans to the pan

INGREDIENTS:

  • ½ cup walnuts
  • Kosher salt
  • ½ cup fresh ricotta
  • Zest of 1 lemon
  • 1 garlic clove, finely grated
  • 2 tsp. finely chopped oregano
  • 2 oz. Parmesan, finely grated, plus more for serving
  • ¼ cup extra-virgin olive oil
  • Freshly ground black pepper
  • 1 lb. tube- or rod-shaped pasta (such as rigatoni or spaghetti)

PREPARATION:

1-Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 6–8 minutes. Let cool, then finely chop. Bring a large pot of generously salted water to a boil.

2-Vigorously mix walnuts, ricotta, lemon zest, garlic, oregano, and 2 oz. Parmesan in a large bowl until well combined. Add oil 1 Tbsp. or so at a time, stirring well after each addition, until all the oil is incorporated. Season pesto with salt and pepper.

3-Cook pasta in pot of boiling water, stirring occasionally, until al dente. Scoop 1 cup pasta cooking liquid into bowl with pesto and stir gently to combine (it’s okay if some of the pesto is still in small clumps). Using a spider, tongs, or slotted spoon, transfer pasta directly to bowl with pesto. Mix energetically until pesto thickens enough to lightly coat pasta, about 2 minutes; the pasta should have sauce clinging to it but there should also be some extra sauce that collects in bottom of bowl.

4-Divide pasta among bowls and serve with more Parmesan alongside for sprinkling over.

Ingredients:

  • 3 eggs
  • 1/2 cup of superfine sugar.* (You can use less if you prefer for your cake not to be sweet.)
  • 1/2 cup vegetable oil
  • 3/4 cup plain Greek-style yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 6 teaspoons green tea powder (nok-cha karu, matcha)
  • Cream cheese frosting (optional, consider the frosting if you plan to use little to no sugar.)

Steps to Make It:

To begin making the cake, turn the oven on and preheat it to 350 F.

Then, in a mixing bowl, beat eggs, sugar, vanilla, and oil together until the resulting mixture is fluffy and light.

Gently stir Greek yogurt into the mixture. This yogurt has a range of health benefits, including high protein content and probiotics which are great for balancing gut bacteria. Choose the organic variety if it’s available and in your budget range.

After stirring in the yogurt, get a separate bowl, and then sift the flour, baking powder, and green tea powder together.

Next, gently fold the flour mixture into the wet sugar-yogurt mixture.

Then, pour the resulting cake batter into a greased cake pan, smoothing out the top until level.

Bake the cake for 35 minutes or until the top becomes golden brown and a toothpick comes out clean from the middle. If there’s batter on the pick, keep the cake in the oven for a few more minutes, checking periodically until it’s done.
