Taquitos

Taquitos are crispy, golden rolls packed with flavorful fillings. Perfect for snacking, lunch, or a party appetizer, they’re easy to make and even easier to enjoy each bite delivers a satisfying crunch and a burst of deliciousness.

Serves 6 to 8

Ingredients

Jackfruit

  • 1 (20-ounce) can Jackfruit, cored and shredded
  • 1 teaspoon extra-virgin olive oil
  • 2 garlic cloves, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Pinch cayenne pepper
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • 1 (4-ounce) can diced green chiles, drained

Taquitos

  • 12 to 14 flour or flour+corn tortillas*, (see note)
  • ¾ cup refried beans
  • ½ cup jack cheese
  • ¼ cup chopped scallions
  • Extra-virgin olive oil cooking spray
  • Toppings, Guacamole, Pico de Gallo, cilantro, serranos

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • On the baking sheet, toss the shredded jackfruit with the olive oil, garlic, cumin, coriander, cayenne, salt and several grinds of pepper. Add the green chiles and toss again. Spread in a thin layer on the baking sheet. Bake for 15 to 18 minutes or until the jackfruit is lightly golden brown. Remove from the pan.
  • Line the baking sheet with a new sheet of parchment paper and warm the tortillas until they’re pliable, 3 to 5 minutes. Spread a strip of refried beans near the left edge of the tortilla. Add some of the jackfruit mixture and a sprinkle of cheese and scallions. Don’t overstuff. Tuck and roll into thin taquitos and carefully transfer each to the baking sheet. If necessary, you can use toothpicks to hold them in place.
  • Spray very generously with olive oil cooking spray and bake 20 minutes or until golden brown and crispy around the edges.
  • Top with desired toppings.

Notes

*I got the best results with these small, pliable flour+corn tortillas which I find at Whole Foods. In terms of texture, flour tortillas are the next best option, as they hold their shape better and crack less than corn tortillas.

Crispy Broccoli Parmesan Fritters

Crispy Broccoli Parmesan Fritters baked instead of fried is a great way to deliciously stash veggies for both children and adults!

Ingredients 

  • ▢ 1 broccoli large
  • ▢ 1 egg large
  • ▢ 1/2 onion
  • ▢ 2 teaspoons garlic minced
  • ▢ 1/3 cup parmesan cheese shaved
  • ▢ 1/3 cup flour or almond flour for a lower carb option
  • ▢ 1 teaspoon kosher salt
  • ▢ ¼ teaspoon black pepper
  • ▢ 1 spray olive oil cooking spray

Instructions 

  • Preheat oven to 400°F | 200°C. Line 2 baking sheets with parchment paper; set aside.
  • Chop the broccoli into florets. Discard the hard part off of the stem, and chop the stem also. Place the broccoli and stem pieces into a food processor and pulse a few times until the broccoli is chopped. Add in the eggs, onion, garlic, flour and Parmesan. Pulse again a couple of times until well combined (about 5 seconds of pulsing). Stir the salt and pepper through the mixture.
  • Form 8-10 fritters on the prepared baking sheets, making sure they don’t touch each other. Spray with a light coating of olive oil spray.
  • Bake for 12-15 minutes on each side until golden.
  • Alternatively pan fry in a nonstick pan over medium heat until golden on both sides.
  • Allow fritters to cool slightly before serving. Serve with ketchup, Greek yogurt or fat free sour cream.

Notes

  • The trick to getting baked fritters crispy like they’re pan-fried amigos is to spray them with a light coating of olive oil spray.

Ingredients

  • 1 flax egg sub 1 large egg beaten
  • 3 tbsp tahini, or other drippy nut/seed butter (48 g)
  • 1/4 cup sugar (48 g)
  • 1/2 tsp vanilla extract
  • 1 cup + 2 tbsp flour (135 g) gf all purpose if desired
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (45 g)

Instructions

  • Preheat oven to 375F and line a cookie sheet with parchment.
  • In a medium bowl, combine flax with water and let it thicken 10 minutes.
  • Add tahini, sugar, vanilla and mix until well blended.
  • In a separate bowl whisk together flour, baking powder, salt. Stir this into the wet ingredients until a heavy dough forms.
  • If it’s still sticky add more flour 1 tbsp at a time. Fold in chocolate.
  • Form a long roll of dough (use a lightly floured surface if it helps) and place on the cookie sheet.
  • Press down to about 1/2 inch thick.
  • Bake until golden brown about 20-25 minutes. Let the baked roll cool for a few minutes.
  • Slice into 16 and place the slices cut side up back on to the cookie sheet. Bake another 5-10 minutes until nicely toasted.
  • Let biscotti cool completely and enjoy!

Notes

  • To make a flax egg, stir together 1 tbsp (7 g) flax seed meal and 3 tbsp water and let it sit and thicken for 5 minutes.
  • We let our biscotti stay nice and crunchy in room temperature. They were consumed pretty quickly but I’ll bet they’ll stay fresh a few days at least!
