BREAKFAST SKILLET

INGREDIENTS:

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 3 medium sized golden potatoes finely diced (about 1 1/2 cups)
  • 3/4 cup finely diced onion
  • 1/4 tsp season salt
  • 1/4 tsp pepper
  • 2 tsp chopped garlic
  • 2 slices bacon diced (uncooked)
  • 1 red bell pepper seeded and finely diced
  • 1 green bell pepper seeded and finely diced
  • 1 cup cooked ground turkey breakfast sausage, such as Jimmy Dean
  • 6 eggs
  • 1 cup KRAFT Shredded Sharp Cheddar Cheese

INSTRUCTIONS:

  • Heat a 12 inch cast iron or other oven safe skillet over medium heat. Add about a tablespoon of olive oil and a tablespoon of butter, and just when the butter is melted add the onions and potatoes.
  • Cook onions and potatoes for about ten minutes, stirring gently every couple of minutes, until they begin to turn a nice golden color.
  • While the potatoes are cooking, whisk the eggs in a small bowl and set aside.
  • Add two slices of diced bacon. Stir and cook for a few minutes or until the bacon is cooked.
  • Add the bell peppers and turkey sausage and continue to cook until peppers are soft.
  • Pour the eggs evenly over the potato mixture, then top with shredded Sharp Cheddar Cheese.
  • Bake in a preheated 350 degree oven for about 10-15 minutes, or until eggs are cooked to your liking.

Low Carb Turkey Club Egg Wrap

Ingredients:

  • 2 large eggs
  • ½ teaspoon cornstarch
  • 1 teaspoon warm water
  • 1 tablespoon butter
  • ¼ cup mozzarella cheese, shredded
  • 4 slices deli turkey
  • 2 slices bacon
  • ½ avocado, sliced
  • A handful of fresh spinach
  • Salt and pepper to taste
  • Optional add-ins: thinly sliced tomato, sliced bell peppers, sliced onions

Instructions:

  1. In a small bowl, whisk together the cornstarch and water. Add the two eggs and whisk again until combined.
  2. Heat a large skillet over low-to-medium heat. Add butter and allow it to completely melt and coat the entire bottom of the pan.
  3. Pour in the egg mixture and lift the pan – tilting to each side so the egg completely covers the bottom of the pan in a thin layer. Allow it to cook for just a couple of minutes. Sprinkle on desired amount of salt and pepper.
  4. Using a large wide spatula, gently lift the outer edges of the egg and then flip it over to cook the remaining side for 1-2 minutes. Remove from heat.
  5. Add desired toppings, starting with shredded cheese.
  6. Gently roll up the egg wrap and slice in half for easier eating.

INGREDIENTS:

  • 1 can refrigerator biscuits
  • 1/2 cup strawberry jam
  • 1/2 cup powdered sugar
  • 1-2 tbls milk
  • red food coloring
  • heart shaped metal cookie cutter

INSTRUCTIONS:

  1. Preheat oven according biscuit can instructions.
  2. Remove biscuits from can and gently separate them. Slice each biscuit in half, being careful to only cut 3/4 of the way through. Open up biscuit and place 1-2 tsp of jam in each biscuit, replace top half, and pinch edges closed.
  3. Gently press cookie cutter into biscuit cutting into a heart shape. Remove outer dough, slide cut biscuit with cutter onto a spatula and transfer to baking sheet sprayed with non-stick cooking spray. Remove cutter and repeat with remaining biscuits.
  4. Bake according to package instructions. Meanwhile, mix powdered sugar, milk, and food coloring in a small bowl. Remove biscuits from oven and let cool for 30 minutes before drizzling with icing.
