COCONUT CREAM PIE BARS

INGREDIENTS: FOR THE CRUST: 8 ounces vanilla wafers, finely crushed 6 tablespoons unsalted butter, melted FOR THE CREAM CHEESE LAYER: 8 ounces cream cheese, at room temperature 1/4 cup granulated sugar 1 cup sweetened whipped cream* 24 vanilla wafers FOR THE PUDDING LAYER: 1 recipe vanilla pudding**

INGREDIENTS: 2 ½ cups fresh (or frozen mango) 1 can coconut milk (full fat) (or plain yogurt) ½ tsp cardamom 2-3 Tbsp honey Handful ice cubes Handful Nature’s Path Pumpkin Seed + Flax Granola DIRECTIONS: Combine all ingredients in a blender and blend until smooth.

Strawberry Awayukikan Dessert

Ingredients:

5 strawberries
300ml water
4g powdered kanten agar agar
1 egg white
50g sugar

How To Prepare:

  1. Wash the strawberries and remove the stalks. Then mash 3 strawberries with a fork and slice the rest thinly for decoration. Set the sliced strawberries aside for later.
  2. Mix the water and gelatine in a medium-sized sauce pan and bring to the boil on medium heat. When it starts to boil, turn the heat to low, and stir until the gelatine fully dissolves.
  3. Add the mashed strawberries and sugar into the saucepan, and stir well. Turn off the heat and allow to cool down until room temperature.
  4. In a separate bowl, whisk the egg white until stiff peaks form and gradually add the gelatine mixture to the egg whites.
  5. Line a container with parchment paper and arrange the sliced strawberries on the bottom. Then pour the mixture onto the strawberries and allow to cool in the refrigerator until firm.
  6. When ready to serve, take the dessert out of the container and flip over so the strawberry slices are on top. Slice into 2-3 portions. Enjoy as a light dessert or an alternative to marshmallows.

What You Need:

5 biscotti, roughly crushed
600ml double cream
125g dark chocolate, broken into chunks 100g Nutella
3 egg whites
100g caster sugar
100g hazelnuts

Let’s Make It:

  1. Line a 900g loaf tin with baking paper. Add two of the crumbled biscotti into the bottom of the tin, distributing evenly.
  2. Put half of the cream in a pan and gently bring to a simmer. Meanwhile, put the chocolate and Nutella in a bowl.
  3. When the cream is just simmering, pour over the chocolate and Nutella and leave it to melt, stirring occasionally. Set aside and allow to cool to room temperature.
  4. Beat the egg whites in a clean mixing bowl until stiff, then add the sugar and beat again until you have a thick, shiny meringue.
  5. Whisk the remaining cream to stiff peaks. Gently fold the whipped egg whites and cream into the chocolate, followed by the hazelnuts and remaining biscotti chunks.
  6. Carefully transfer the mixture into the loaf tin. Cover with cling lm and place in the freezer for at least ve hours, or overnight if possible.
  7. Remove from the freezer and leave to sit for 15 minutes before slicing to serve.

Ingredients:

  • 3 eggs
  • 1/2 cup of superfine sugar.* (You can use less if you prefer for your cake not to be sweet.)
  • 1/2 cup vegetable oil
  • 3/4 cup plain Greek-style yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 6 teaspoons green tea powder (nok-cha karu, matcha)
  • Cream cheese frosting (optional, consider the frosting if you plan to use little to no sugar.)

Steps to Make It:

To begin making the cake, turn the oven on and preheat it to 350 F.

Then, in a mixing bowl, beat eggs, sugar, vanilla, and oil together until the resulting mixture is fluffy and light.

Gently stir Greek yogurt into the mixture. This yogurt has a range of health benefits, including high protein content and probiotics which are great for balancing gut bacteria. Choose the organic variety if it’s available and in your budget range.

After stirring in the yogurt, get a separate bowl, and then sift the flour, baking powder, and green tea powder together.

Next, gently fold the flour mixture into the wet sugar-yogurt mixture.

Then, pour the resulting cake batter into a greased cake pan, smoothing out the top until level.

Bake the cake for 35 minutes or until the top becomes golden brown and a toothpick comes out clean from the middle. If there’s batter on the pick, keep the cake in the oven for a few more minutes, checking periodically until it’s done.
