Our Favorite Stuffed Pepper Soup

Ingredients:

1 tablespoon olive oil

1 cup diced onion

2 cups diced peppers (red or green or a combination of both)

1 tablespoon chopped garlic

1 1/2 pounds lean ground beef

1 1/2 teaspoons salt

Black pepper to taste

1 – 1 1/2 teaspoons cumin (depending on taste)

2 teaspoons dried oregano

2 tablespoons tomato paste

4 cups beef broth

15 ounce can crushed tomatoes

8 ounce can tomato sauce

1 tablespoon Worcestershire sauce

1 1 /2 cups cooked white or brown rice

Instructions:

Heat the oil in a large dutch oven or soup pot. Add the onion and peppers and cook for 5 minutes until softened. Stir in the garlic and cook for 1 minute.

Push the onions and peppers to one side of the pot and add the beef, breaking up with a spoon as it browns. Drain any drippings from the beef if needed, then stir to combine with the onions and peppers.

Add the salt, pepper, cumin, oregano and tomato paste. Stir to work the tomato paste into the beef and vegetables. Pour in the beef broth, crushed tomatoes, tomato sauce and Worcestershire sauce. Stir and bring to a simmer.

Simmer the soup over medium heat for 15 minutes. Taste the soup for seasonings and adjust if needed. Stir in the cooked rice, or spoon into individual bowls as you serve.

Buffalo Corn-Potato Chowder

Ingredients:

  • ½ cup chopped onion
  • ½ cup chopped red sweet pepper
  • 2 garlic cloves, minced
  • 1 tablespoon vegetable oil
  • 1 16 ounce package frozen whole kernel corn
  • 1 14.5 ounce can chicken broth or vegetable broth
  • 1 cup cubed, peeled potato (1 medium)
  • 1 ½ cups half-and-half or light cream
  • 2 tablespoons all-purpose flour
  • ½ cup crumbled blue cheese
  • ½ cup shredded Swiss cheese
  • 3 – 4 tablespoons bottled cayenne pepper sauce (Frank’s Red Hot)
  • Chopped celery and/or crumbled blue cheese (optional)

Directions:

  • Step 1:In a large saucepan, cook onion, sweet pepper and garlic in hot oil until onion is tender but not brown. Stir in corn, broth and potato. Bring to boiling; reduce heat. Simmer, covered, for 10 to 15 minutes or until vegetables are tender, stirring occasionally.
  • Step 2:Stir together half-and-half and flour until combined. Add to corn mixture. Cook and stir until slightly thickened and bubbly. Cook and stir for 1 minute more. Stir in 1/2 cup blue cheese and Swiss cheese and heat until melted and smooth. Stir in bottled pepper sauce. If desired, top with chopped celery and additional crumbled blue cheese.
