Greek Turkey Meatball Tzatziki

Ingredients:
Tzatziki Sauce
1 1/4 cup plain greek yogurt, seperated 2 tablespoons fresh dill, minced 2 cloves garlic cloves, minced 1 lemon, juiced 1/3 cup cucumber, diced
Meatballs
1 pound ground turkey 1/2 cup panko bread crumbs 1 egg 1/4 cup red onion, minced 1 clove garlic, minced 1/2 teaspoon oregano, dried 1 teaspoon ground cumin 1 teaspoon salt 1 teaspoon ground black pepper 2 tablespoons olive oil
Garnishes
White rice Cucumber, diced Red onion, diced Tomato, diced Feta cheese, crumbled
Directions:
Tzatziki Sauce
- In a medium bowl, combine 1 cup yogurt, dill, 2 cloves of garlic and lemon juice and stir until combined. Remove 1/4 cup of mixture from the bowl and set aside. Fold cucumber into the remaining ingredients in the bowl until evenly mixed. Set sauce aside.
Meatballs
- In a large bowl, combine ground turkey, breadcrumbs, egg, onion, remaining clove of garlic, oregano, cumin and salt and pepper. Add in reserved 1/4 cup of yogurt mixture. Mix until just combined using a spatula or your hands. Form into 12 meatballs.
- Heat a large, heavy- bottom skillet with olive oil over medium heat. Add meatballs in batches and cook for 7-8 minutes, turning periodically to ensure even browning on all sides. Once meatballs reach 165 F degrees, transfer to a plate. Continue until all meatballs are cooked.
Garnishes
- Serve meatballs over a bowl of cooked rice and garnish with red onion, cucumber, feta cheese and a dollop of Tzatziki sauce as desired.
